This is my favorite dish to make in bulk! It is so easy to pack for lunch everyday and it is bursting in flavor. This is also my go-to for chillier days when you need a little extra warmth. Here is what you'll need - I actually get ALL of these ingredients from Trader Joe's:
Ingredients:
1 lb of fat free ground turkey
2 cans of fire roasted diced tomatoes
1 can of kidney beans (drained)
1 can of black beans (drained)
1 can of corn (or use frozen corn) (drained)
1 small can of fire roasted green chiles
1 cup of low sodium tomato soup
1 medium yellow onion (chopped)
1 jalapeno (diced)
1 yellow bell pepper (diced)
1 garlic clove (mashed)
1 packet of taco seasoning
1/2 tablespoon of cumin
1-2 tablespoons of olive oil
Low-fat plain Greek yogurt / Cholula / Avocado to top off
Cooking Directions:
I typically make this in a giant pot because I am impatient about using my crock pot but you could do either one. I would always recommend browning the meat first though! Be sure not to over cook the meat.
Heat the olive oil in a large pot (if you are using a crock pot you can just use a pan then put the ground turkey in the crock pot) bring to medium high heat. Because the turkey is fat-free, you will not have to drain it so you can use the same large pot to put everything in. Place the turkey in and season with cumin and 1/3 or 1/2 of the taco seasoning. Ground turkey tends to be pretty flavorless so be generous with the seasoning! Using a wooden spatula bring up the ground turkey while it cooks and until it is a light brown.
Then stir in chopped onion and peppers. Cook until tender. Then add in the tomato soup, all beans, corn, tomatoes, chilies, and the remainder of the taco seasoning. Bring to boil then bring heat to low. Simmer for about 25 minutes.
To garnish I like to mix the Greek yogurt with Cholula to make a mock baja sauce and of course a little avocado on top! Enjoy :)
