This is my absolute favorite soup in the entire world! I called it Mel's version of chicken noodle soup ;) It's everyone's classic favorite with a zesty twist. I actually discovered this one by accident. One day in college, I was attempting to make my aunt's famous chicken soup that everyone in my Turkish family is obsessed with. I got the recipe mixed up with a classic version of American chicken noodle soup and was pleasantly surprised. Now, this is my go-to soup on a cold day or when I am not feeling well. It really warms the soul :)
Ingredients:
2 boneless, skinless chicken breasts
1 carton of chicken bone broth(Trader Joe's)
1/2 a medium yellow onion, chopped
3-4 large carrots, peeled, sliced
3-4 celery, chopped
1-2 tablespoon olive oil
salt and pepper to taste
1/2 teaspoon oregano (dry)
1/2 teaspoon basil (dry)
1/2 teaspoon parsley (dry)
1/2 teaspoon thyme (dry)
1 egg
1/2 bag of Trader Joe's Organic Pasta Vegetable Radiatore (I use vegetable pasta, but this is entirely up to you, you can use whole wheat, or egg noodles)
2 lemons, fresh squeezed
Directions:
Bring chicken breasts to room temperature and pat dry with a paper towel. Sprinkle with the oregano, basil, parsley, thyme. A little sale and pepper to taste. Set aside
Turn stove on to high heat and drizzle some olive oil in a large deep pot. Once warm, add in carrots, onion, and celery. Stir and simmer for about 4-5 minutes. This allows the vegetables to have a nice sauteed flavor in the soup.
Then add in the broth and fill the pot up with water so the pot is 3/4 full. Add in the whole chicken breasts. Let everything come to a boil and turn down to a medium heat for 20 minutes. Check to make sure the chicken is cooked all the way, then take out and shred using two forks. While you are doing this, add in the noodles and cook for an additional 8 minutes.
While the noodles cook, crack an egg into a small bowl and add in the juice from the 2 fresh lemons. Either use a hand blender or a whisk to mix it VERY well. Slowly stir in this mixture into the pot and add in the chicken back into the soup. Once the noodles have been cooked, immediately remove the pot from heat.
Once you place the soup into bowls you can top it off with more fresh squeezed lemon to give it some more extra zest!
