This one is my take on the classic Turkish style scrambled egg dish called menemen. Of course you can make the eggs scrambled but I am addicted to a runny yolk so I like them over-easy! This is my go-to breakfast when I have a little extra time in the morning. It is bursting in flavor and low in calories. Here's what you will need for a single serving (double up if cooking for two) and give it your own flare! Sometimes changing one ingredient can make it taste like a whole new meal!
Ingredients:
1 egg (or 2)
1/2 a yellow onion
1 Hungarian pepper
1 tomato on the vine (a medium sized tomato)
1 tablespoon olive oil
salt and pepper to taste
1/2 teaspoon oregano (dry)
1/2 teaspoon cumin
1/2 teaspoon thyme (dry)
Part-skim Feta to top off (Trader Joe's)
Directions:
In a food processor (or you can cut up yourself) chop the onion and pepper. Drizzle the olive oil into a pan and bring to medium high heat. Sweat the onion and add the spices for about 2-3 minutes. Meanwhile, put the tomato in the food processor and puree. Add to the pan with the onion and pepper. Let simmer for another three minutes. Then crack egg(s) into the mixture. Immediately cover the pan with a lid. For over easy, egg should cook in about 2 minutes. With a large spatula remove menemen from pan and place on plate, add some crumbled feta on top. Pairs very well with a slice of fresh ciabatta and a mimosa ;)
